Rita’s Keto Success Story




 

Like most women, I know you have tried to lose weight.

So here’s the story…

Rita was as frustrated as most woman trying to figure out how to lose weight. She’s 49, married with no kids, and living in the Midwest with a busy, professional job in corporate America. Being a super active woman, Rita did a lot of CrossFit and hoped she’d be able to maintain a lean, healthy body from exercising alone.

Ooops! She fell for the old myth. 

Despite working out five to six days a week, she couldn’t get the weight loss results she desired. She doubled-down with dieting, ate as healthy as possible, and exercised even more.

But guess what?

The more she tried, the more she gained extra weight!

You can relate to this situation. Right?

Rita then decided to try keto on her own to see if it would be the solution to her problems. She kept at it for a long time but struggled to get past the 20 lbs weight loss mark for years. For one, she consistently failed at making healthy dinner-time food choices. Not that she never tried. At this point, Rita was demoralized…

I mean, how could she be working out six days a week, eating keto, but the weight wasn’t falling off? Anyone in this situation would be demotivated. But things started to turn around for Rita when she signed up for my keto program.

Fast forward nine weeks, after working with me, Rita lost 17.6 lbs and 22 inches off of her body. And here’s one interesting fact to note. For someone as fit as Rita was, she lost more inches than the scale indicated in the real sense. Why? Because due to her frequent gym workout routine, she was losing fat and gaining muscle concurrently.

Nicole’s Keto Success Story

It’s been a couple of weeks since you last checked your weight

You wake up early in the morning and step into your bathroom to take your bath. Stepping out of the shower, you see your bathroom scale in a corner and decide to track your weight loss progress. “This can’t be. I’ve gone past my goal weight?!” Surprised by the reading of the scale, you step down and on again to confirm the scale isn’t broken. The same numbers are still staring at you…

The scenario above was exactly Nicole’s experience. Well, without the part where she climbed a scale.

Nicole’s scale was at her friend’s for months, so she couldn’t consistently track her weight when she started working with me. Suzie’s Keto Success Story

This is BIG! this is BIG!!…

Suzie literally shouted those words five times while I was on the phone with her. Why? You might be thinking…

She’d just made her biggest keto discovery ever.

What was this discovery? You’ll find out in a teeny tiny bit…

But first, a little background story about Suzie. Let’s get on with Suzie’s story…

Suzie is a 66 years old wife, works a high-stress job, 5′ 4″ tall, and weighed almost 200 lbs. Like most women her age, Suzie tried many diet plans and weight loss programs to lose weight. She even hired a personal trainer and worked out five days a week. While she found a bit of success with some of those programs and her workout routine, she faced one problem. Thanksgiving 2016 Keto Recipe Round Up

Many people use the holidays as an excuse to jump off the keto wagon and over-indulge in high-carb and sugary carbage. Why? There are so many delicious keto-friendly recipes out there, there really is no reason to ruin your keto high.

Here are my favorite Thanksgiving appropriate, keto-friendly, delicious recipes for this year.

Turkey

Turkey is definitely the easiest part of a traditional Thanksgiving meal to convert into a low-carb version, because it’s naturally low carb! So most any turkey recipe out there will work, but I thought I’d include a not-so-average way of making turkey – sous vide – (Thanks for the suggestion, Mike!). Try topping your turkey with one of the compound butter recipes below, too.

Probably the most missed traditional Thanksgiving side dish is the stuffing (or is it mashed potatoes??). But do not fret, dear Ketonian! There are delicious ways to have your stuffing and maintain ketosis.

Cauliflower Stuffing (from Delish – considering leaving out the carrots, and perhaps even adding sausage!)

Loaded Cauli “Faux-tato” Salad

Although summer is taking its sweet time arriving here in the Pacific Northwest this year, that isn’t stopping me from grilling up some tasty meats (like tri tip) and making delicious, high-fat side dishes to go along with them.

I was inspired to make this potato salad style side dish (made with cauliflower instead of potatoes) after having a version of it made by my cousin’s wife at a family birthday party. It was so incredibly delicious, everyone at the party, even the non-Ketonians, LOVED it and asked for seconds.

I made my first version of this while visiting a friend and his family (HI JERRY!) in Oregon and it was received with similar accolades. “We need the recipe!!” is all I’ve heard the last few weeks.

So here it is, finally! I made this dish for 4th of July and it’s still as satisfying as the first one I had months ago. For a tasty variation, try subbing out the sharp cheddar for blue cheese. And of course you can always add more bacon.

Ingredients

1 head cauliflower

1 cup mayonnaise

1 cup sour cream

3 large hard boiled eggs, diced

4 strips thick-cut bacon, cooked and crumbled

4 ounces sharp cheddar, shredded

2 green onions, white and green parts, thinly sliced

1 teaspoon salt

1/2 teaspoon ground black pepper

Directions

The only slightly tricky part of this recipe is cooking the cauliflower “just right”. You want it to be sort of soft, but not mushy.

After you remove the hard core and any leaves, you can try one of these techniques:

  • Dice cauliflower and steam it until fork tender, 1 – 3 minutes
  • Place entire head into pressure cooker and cooking LOW pressure for one minute. Use quick release method and slice and cool. Then cut into cubes. (This is the method I used.)
  • Dice cauliflower and put in a bowl in the microwave with about 1/4 cup of water. Cook on medium-high for 3 -5 minutes at a time, checking each time for doneness. Since microwave ovens vary so greatly, the total time may be 15 – 20 minutes.

Cool cauliflower cubes and then toss all ingredients in a large bowl. Taste and add more salt or pepper if desired.

Yield: 8 servings

Nutrition per serving: 382 calories, 6 g carbs, 2.4 g fiber, 11 g protein, 35 g fat
